Hey everyone! Welcome back to Ask Mum and Dad. Today, I’m going to show you how to make delicious and easy fried rice right at home. This dish is perfect for a quick meal and a great way to use up leftovers. Let’s get cooking!

Ingredients Overview
Here are the ingredients you’ll need for our fried rice:

  • 2 cups of cooked, cold rice (day-old rice works best)
  • 2 tablespoons of vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of mixed vegetables (like peas, carrots, and corn)
  • 2 eggs, beaten
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce (optional)
  • 1 teaspoon of sesame oil
  • Salt and pepper to taste
  • Green onions for garnish

Preparing the Ingredients
First, make sure your rice is cold. Freshly cooked rice can be too sticky for fried rice, so it’s best to use rice that has been chilled in the fridge. If you don’t have day-old rice, spread freshly cooked rice on a baking sheet and let it cool for about 30 minutes.”
Next, chop one small onion finely and mince two cloves of garlic. Also, beat two eggs in a small bowl and set them aside.


Cooking the Fried Rice
Heat your wok or large skillet over medium-high heat and add two tablespoons of vegetable oil.
Once the oil is hot, add the chopped onion and garlic. Stir-fry for about a minute until they become fragrant.
Now, add one cup of mixed vegetables. You can use fresh or frozen veggies. Stir-fry for another 2-3 minutes until the vegetables are tender.
Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until they’re fully cooked. Once the eggs are cooked, mix them with the vegetables.


Adding Rice and Seasoning
Now, add the cold rice to the pan. Break up any clumps and stir everything together so the rice gets coated with the oil and mixes with the veggies and eggs.

Next, pour in two tablespoons of soy sauce and one tablespoon of oyster sauce if you’re using it. These sauces will give our fried rice that classic umami flavor. Drizzle a teaspoon of sesame oil for a nice, nutty aroma. Season with salt and pepper to taste.
